Best known for its “build-your-own-bowl” concept, Build the Pho allows guests to fully customize their pho experience with a wide variety of noodles, broths, and proteins. Owner Eric Weng says the personalized model offers diners more flexibility and creativity than traditional pho menus.
“Our guests love having control over what goes into their bowl,” says Weng. “Whether they want something light and plant-based or hearty and meaty, they can make it their own.”
All broths — including rich beef and savory vegan options — are crafted fresh in-house each day. Guests can build their perfect bowl by choosing from four noodle varieties: traditional rice, wide rice, egg noodles, or vermicelli.
The protein selection is just as generous, offering everything from rare beef, brisket, and meatballs to beef tendon, tripe, sliced chicken, shrimp, and tofu — with the option to double or triple your favorites for an extra hearty meal.
Beyond pho, the menu also highlights a variety of Vietnamese staples, including fresh spring and summer rolls, grilled pork buns, and flavorful grilled steak over rice.
